Crispy Garlic Parmesan Crusted Potatoes

- 1 pound Mini Yukon gold potatoes
- 2 TBSP Olive or avocado oil
- 1 TBSP dried parsley
- 1 TBSP garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup unsalted butter
- 1 1/2 cup parmigiano reggiano grated
Preheat oven to 400
Wash potatoes and cut in half. Place in large bowl.
Toss potatoes with olive oil, parsley, garlic powder and salt. Set aside.
Place cheese in baking dish and pour melted butter on top. Mix until it’s a thick paste and spread into ann even layer.
Press potato halves into the cheese, cut side down.
Bake 25 minutes. Let rest for 10 minutes so the cheese hardens. Scrape loose with a spatula and break into pieces.
