Crispy Garlic Parmesan Crusted Potatoes

Ingredients
  

  • 1 pound Mini Yukon gold potatoes
  • 2 TBSP Olive or avocado oil
  • 1 TBSP dried parsley
  • 1 TBSP garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup unsalted butter
  • 1 1/2 cup parmigiano reggiano grated

Instructions
 

  • Preheat oven to 400
  • Wash potatoes and cut in half. Place in large bowl.
  • Toss potatoes with olive oil, parsley, garlic powder and salt. Set aside.
  • Place cheese in baking dish and pour melted butter on top. Mix until it’s a thick paste and spread into ann even layer.
  • Press potato halves into the cheese, cut side down.
  • Bake 25 minutes. Let rest for 10 minutes so the cheese hardens. Scrape loose with a spatula and break into pieces.
