Crispy Garlic Parmesan Crusted Potatoes
Ingredients
- 1 pound Mini Yukon gold potatoes
- 2 TBSP Olive or avocado oil
- 1 TBSP dried parsley
- 1 TBSP garlic powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup unsalted butter
- 1 1/2 cup parmigiano reggiano grated
Instructions
- Preheat oven to 400
- Wash potatoes and cut in half. Place in large bowl.
- Toss potatoes with olive oil, parsley, garlic powder and salt. Set aside.
- Place cheese in baking dish and pour melted butter on top. Mix until it’s a thick paste and spread into ann even layer.
- Press potato halves into the cheese, cut side down.
- Bake 25 minutes. Let rest for 10 minutes so the cheese hardens. Scrape loose with a spatula and break into pieces.
